KARAKTERISTIK EDIBLE FILM DARI KOMPOSIT CHITOSAN DAN EKSTRAK BUAH SENGGANI (Melastoma malabathricum L.) SEBAGAI SMART AND ACTIVE PACKAGING

Edible film is a thin layer made from biopolymers that can be eaten. In order for edible film to function as active packaging, antimicrobial agents must be added to enhance protection against bacteria. One natural material containing antimicrobial compounds is chitosan. Chitosan is a polysaccharide derived from chitin, a substance found in the shells of crustaceans. During the production of edible film, active ingredients can also be added to create smart packaging. Commonly used active ingredients to transform edible film into smart packaging include plant extracts rich in anthocyanins, such as senggani fruit. This study aims to investigate the characteristics of edible film composed of chitosan and senggani fruit extract as smart and active packaging. This study was conducted using a Randomized Block Design (RBD) with varying chitosan concentrations at five treatment levels: A1 = 1%, A2 = 1.5%, A3 = 2%, A4 = 2.5%, and A5 = 3%, with each treatment repeated three times. The results showed that the chitosan treatment in the production of edible films from chitosan composite and senggani fruit extract as smart and active packaging significantly affected the thickness value ranging from 0.10 to 0.18 mm, water vapor transmission rate (WVTR) ranging from 2087.22 to 2704. 73 g/m²/day, tensile strength between 0.0 and 0.5 MPa, and elongation ranging from 4.7 to 87.2%. In FT-IR testing of various chitosan concentrations, it was found that each sample had the same characteristics, namely containing functional groups O-H and N-H, C-H, -NH₂, C-O, and -OH. Based on the characteristics of edible films as smart and active packaging, the optimal concentration was found to be treatment A5 (3% chitosan).
