INKORPORASI PATI KULIT PISANG KEPOK DALAM PEMBUATAN EDIBLE FILM TEPUNG SAGU UNTUK MENSTIMULASI PERTUMBUHAN BAKTERI Lactobacillus plantarum
Edible film is a thin layer used as packaging that can be consumed together with food products. This study aims to create an edible film made from sago flour incorporated with kepok banana peel starch to increase the viability of Lactobacillus plantarum bacteria. The resulting edible film was analyzed for its physical and mechanical properties, then analyzed for resistant starch and bacterial viability as a prebiotic candidate. The results of the study obtained the test values of the physical and mechanical properties of the film, namely a thickness of 0,129-0,177 mm, a tensile strength of 0,152-0,1883 MPa, a percentage elongation of 177,503-89,085 %, a moisture content of 11,4191-16,2427 %, and a solubility in water of 55,312-41,136 %. The results of resistant starch testing on banana peel starch were 39,3947 ± 0,03 %, while in edible films with variations in the addition of 1 %, 3 %, and 5 % kepok banana peel starch, the results were 1,8868 ± 0,016 %; 2,9371 ± 0,018 %; dan 3,758 ± 0,017 % respectively. The results of L. plantarum viability testing with the addition of edible film with a 5 % banana peel starch concentration had the highest total BAL of 2,6 × 109 CFU/mL, followed by edible film with a concentration of 3 % and 1 % with total BALs of 2,3 × 109 CFU/mL and 2,1 × 109 CFU/mL, respectively. Thus, the addition of kepok banana peel starch in sago flour edible film has limited potential as a food packaging material that contains prebiotics to stimulate the growth of L. plantarum bacteria.
