KARAKTERISTIK EDIBLE FILM GLUKOMANAN PORANG DENGAN PENAMBAHAN KITOSAN DAN EKSTRAK SEREH (CYMBOPOGON CITRATUS) SEBAGAI ANTIMIKROBA
This study aims to know the best physical characteristics and antimicrobial activity of porang glucomannan edible film treated with various chitosan and lemongrass extracts. This research uses two factors. Factor A, namely the type of antimicrobial substance (chitosan and lemongrass extract) and factor B, namely the concentration of the type of antimicrobial substance (0.5%, 1%, 1.5% and 2%) and each experiment was repeated three times. Data were processed using a factorial Completely Randomized Design (CRD). Treatments that had a significant effect were further tested using the Duncan test at 5% level. The research results showed that the type of antimicrobial substance had a significant effect on increasing thickness, decreasing water resistance and increasing elongation of edible film, while the concentration of antimicrobial substance had a significant effect on increasing thickness and decreasing elasticity of edible film. The best treatment obtained was 1.5% chitosan which had a thickness of 0.242 mm, tensile strength of 0.6948 Mpa, elongation of 11.12%, water vapor transmission rate of 24.7982 g.m-2.day-1, water uptake 57.68%, compressive strength 15.20 gf, diameter of the inhibition zone against Escherichia coli and Staphylococcus aureus bacteria respectively 9.80 mm and 9.67 mm, both in the medium category.
