KAJIAN DAYA TAHAN KOMPONEN BIOAKTIF EKSTRAK SERAI (Cymbopogon citratus) PADA PENYIMPANAN IKAN ASIN
This research aims to determine the durability of anti-fly and anti-bacterial bioactive compounds from 20% lemongrass (Cymbopogon citratus) extract and 1% chitosan during storage of salted fish. This research was carried out in an experimental laboratory using 5 treatment levels and 3 repetitions, namely F0: Salted Fish without 20% lemongrass extract and 1% chitosan as Control; F1: First day of salted fish storage; F2: Salted Fish Storage for 10 days; F3: Salted Fish Storage for 20 days; F4: Salted Fish Storage for 30 days. In this research, extract yield was calculated, bioactive compounds in the form of phenolics, flavonoids, tannins and saponins were tested in the extracts and samples. The results of this research show that the yield extract is 5%. The bioactive compounds obtained from lemongrass extract total phenolics, flavonoids, tannins and saponins are 123,070 mg GAE/g, 62,150 mg QE/g, 106.74 mg TAE/g and 76,724. In control salted fish, no bioactive compounds were detected during 30 days of salted fish storage, while the bioactive compounds found in salted fish with 20% lemongrass extract and 1% chitosan decreased during storage on days 1, 10, 20 and 30 days, namely on phenolic levels were 10.04 mg GAE/g, 9.47 mg GAE/g, 7.05 mg GAE/g, and 5.74 mg GAE/g. The total flavonoid levels were 7.71 mg QE/g, 5.22 mg QE/g, 4.04 mg QE/g, and 3.30 mg QE/g. Total tannins were 8.66 TAE/g, 6.76 TAE/g, 4.91 TAE/g, and 3.61 TAE/g. Total saponin levels were 6.37 mg SE/g, 4.37 mg SE/g, 3.33 mg SE/g and 2.05 mg SE/g. During 30 days of storage, bioactive compounds from 20% lemongrass extract and 1% chitosan were still detected.
