PENGARUH PENAMBAHAN SARI BUAH KELUBI (Eleiodoxa conferta) TERHADAP KARAKTERISTIK FISIKOKIMIA MANISAN KERING RUMPUT LAUT (Eucheuma cottonii)

Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan sari buah kelubi terhadap karakteristik fisikokimia dan sensori manisan kering rumput laut. Penelitian ini menggunakan rancangan acak kelompok (RAK) dengan metode eksperimen yang dilakukan dengan 4 perlakuan dan 3 kali pengulangan. Parameter penelitian yang digunakan, yaitu analisis kadar air metode oven (AOAC, 2005), kadar gula reduksi metode Luff Schoorl (SNI, 1992), derajat keasaman (AOAC, 2015), kadar vitamin C (Sudarmadji et al., 2007), uji tekstur (hardness), warna (Munsell,1997), dan uji organoleptik. Hasil penelitian menunjukkan nilai kadar air manisan kering 10,82-15,62%, kadar gula reduksi 43,62-55,20%, pH 3,00-5,60, kadar vitamin C 2,35-13,49 mg/100 g, hardness 12,50-53,50 N, chroma 5,62-7,61, hue 60,42-129,87o, uji organoleptik warna 1,06-4,85, kejernihan 1,76-2,53, aroma 1,15-3,41, rasa 1,18-4,32, dan tekstur 1,32-2,82. Perlakuan terbaik pada manisan kering rumput laut adalah perlakuan K1 dengan penambahan sari kelubi 10%.
