GLOKALISASI KULINER SUSHI JEPANG DI KOTA PALEMBANG
This research describes the phenomenon of glocalization of Japanese sushi culinary in Palembang City. Glocalization is the process of interpreting something global with local values. The problem in this research is that Indonesian people do not like Japanese sushi which is served with raw fish. Researchers want to see how sushi adapt various menu variants to suit the tastes of the people of Palembang City. The purpose of this research is to find out how the process of sushi glocalization in Palembang City. The theory used in this research is glocalization theory by Roland Robertson. The method used in this research is a qualitative method with primary data, namely the Palembang City Tourism Office and 3 (three) Palembang City sushi restaurant business actors. Secondary data are academic journals and related media publication. The research results show that the process of glocalization of Japanese sushi culinary is successful in the city of Palembang. These results refer to 4 (four) dimensions namely relativization, accommodation, hybridization, and transformation. The relativization dimension shows that Sushi originating from Japan entered Palembang and its taste was trying to be aligned with the tastes of the community. The accommodation dimension shows the presence of Japanese chefs, business actors, and the Palembang Tourism Office who connect sushi culture in carrying out the process of glocalization of Japanese sushi cuisine in Palembang City. The hybridization dimension shows that there is a process to create a blend of global and local cultures namely Japanese sushi with typical Indonesian taste. The transformation dimension produces a change in the form of a new culture, namely a variant of Japanese sushi that is glocalized into a new characteristic of sushi in Palembang City. For this reason, based on the results of the research, Japanese sushi can be accepted by the people of Palembang City as one of the culinary menus that has become a new culture for the people of Palembang City. This phenomenon can be considered as an effort by society to preserve local flavors in the era of globalization.
