MODIFIKASI MESIN SANGRAI KOPI DENGAN PENAMBAHAN KONTROL KECEPATAN UNTUK MENINGKATKAN KUALITAS BIJI KOPI
The roasting process is a crucial stage in coffee processing, as it significantly affects the flavor and final quality of the coffee beans. Conventional roasting machines typically operate at a fixed speed, which lacks flexibility in adjusting to the specific roasting requirements of different coffee varieties. This study aims to modify a coffee roasting machine by integrating a speed control system based on a dimmer and motor rotation controller to enhance the efficiency of the roasting process and the quality of coffee beans. The research methods include redesigning the machine’s transmission system, installing the speed control mechanism, and conducting performance tests focusing on temperature stability and roasting uniformity. The results show that the use of adjustable speed control helps maintain more stable roasting temperatures and allows precise drum rotation settings according to the desired roast level. Coffee beans roasted using the modified machine demonstrated improved quality based on organoleptic assessments compared to those processed with a standard machine. Therefore, this modification offers a practical solution for small to medium-scale coffee producers to consistently improve product quality and processing efficiency.
