PENGARUH PENAMBAHAN GULA PASIR TERHADAP KARAKTERISASI GULA NIPAH (Nypa fruticans WURMB)

This study aims to determine the effect of adding granulated sugar on mineral content, sugar composition (fructose, glucose, maltose, and sucrose) and texture of nipah sugar. This study uses a quantitative method, the experimental design used is the RAK method (Randomized Block Design) with 4 treatment levels and 3 repetitions, namely A0: Addition without adding granulated sugar 0% as a control; A1: Addition of granulated sugar 9%; A2: Addition of granulated sugar 12%; A3; Addition of granulated sugar 15%. In this study, ash content testing, nipah sugar texture testing, mineral content testing in the form of magnesium (Mg), sodium (Na), iron (Fe), and potassium (K), and sugar composition testing (fructose, glucose, maltose and sucrose) were carried out. The results of this study indicate that the results of adding granulated sugar to ash content have no significant effect. The highest hardness test results were in treatment A2 (12% addition of granulated sugar) of 23364.23 gF while the lowest hardness test results were in treatment A3 (15% addition of granulated sugar) of 4096.63 gF. The highest mineral content obtained from the addition of granulated sugar in the magnesium (Mg), sodium (Na), iron (Fe), and potassium (K) tests of 190.725 mg/kg, 2569.055 mg/kg, 37.645 mg/kg and 1.43 mg/kg. while the lowest in the magnesium (Mg), sodium (Na), iron (Fe), and potassium (K) tests of 175.185 mg/kg, 1974.61 mg/kg, 29.9 mg/kg, and 1.245 mg/kg. In the addition of granulated sugar to the sugar composition, the highest fructose was obtained in treatment A3 (addition of 15% granulated sugar) of 39.04 g/100g, glucose was obtained in treatment A3 (addition of 15% granulated sugar) of 39.04 g/100g, sucrose in treatment A3 (addition of 15% granulated sugar) of 51.63 g/100g. While the lowest fructose and glucose test results were in treatment A2 (addition of 12% granulated sugar) of 23.21 g/100g and 15.18 g/100g. the lowest sucrose test results were in treatment A1 (addition of 9% granulated sugar) of 39.36 g/100g and maltose was not detected.
