PENGARUH PENAMBAHAN TEPUNG KACANG TUNGGAK (Vigna unguiculate L.) DAN SARI JAMBU BIJI MERAH (Psidium guajava L.) TERHADAP SIFAT KIMIA DAN ORGANOLEPTIK PERMEN JELLY
Anemia is a condition of decreased hemoglobin that is still prevalent among adolescent girls in Indonesia, with a prevalence of 16.3% in the 5-14 age group and 15.5% in the 15-24 age group. The government has implemented the Iron Supplement Tablet (TTD) program to reduce anemia rates. Jelly candy is a type of candy that is widely enjoyed by adolescents. The purpose of this study was to determine the effect of adding winged cowpea flour and red guajava juice on iron content, vitamin C content, water content, and organoleptic testing. This study used the quartering method in sampling with 4 treatments and 3 repetitions. The results showed that cowpea flour and red guajava juice affected the chemical content and panelists'preference for jelly candy. The highest average iron content was found in formulation 1, which was 0.82 mg/100g. F3 was teh formulation most preferred by the panelists with a hedonic score of 4 for color, 3.73 for aroma, 3.8 for taste, and 3.83 for texture. It had a pink color, a pleasant aroma, a sweet taste, and a chewy texture. The recommendation from this study is to pay closer attention to the condition of the fruit and the strorage method for red guajava to prevent the loss or degradation of vitamin C content.
