KARAKTERISTIK FISIKO KIMIA GARAM FUNGSIONAL DARI PELEPAH NIPAH (Nypa fruticans) DAN GENJER (Limnocharis flava)
Nipah palm fronds Nypa fruticans are one of the mangrove resources that have the potential to be utilized as an alternative raw material in salt production. However, the salt produced generally has a high sodium-to-potassium (Na:K) ratio, making it less suitable for individuals with hypertension. This study used an experimental method with a Randomized Block Design (RBD) consisting of three treatment levels, namely P1 (1:1), P2 (1:1.5), and P3 (1:2), with three replications. The observed parameters included yield, moisture content, NaCl content, mineral content (Na and K), color (L*, C*, H*), insoluble matter, and antioxidant activity. The results showed that the addition of genjer significantly affected moisture content, insoluble matter, color (L*, C*), and antioxidant activity, but had no significant effect on yield, NaCl content, and Hue values. The test results obtained were moisture contents of 2.91, 2.79, and 3.90; antioxidant activities of 767,00, 436.00 and 242,67; insoluble matter values of 0.014, 0.138, and 0.480; L* (Lightness) values of 42.52, 41.32, and 41.05; and C* (Chroma) values of 2.82, 2.61, and 0.98. Meanwhile, the Hue values were not significantly affected. Based on the research results, the best treatment in terms of the Na:K ratio was obtained in treatment P2 (1:1.5), which showed a better mineral balance and potential as an alternative low-sodium salt.
