FORMULASI DAN UJI ANTIOKSIDAN FITOSOM EKSTRAK KULIT BAWANG MERAH (Allium cepa L.) SECARA IN VITRO
Onion peel contains flavonoid and phenolic compounds that have potential as antioxidants; however, they have limitations in stability and bioavailability. Onion peel extract has a dark red color and a characteristic onion peel odor, with moisture content, water-soluble extractive content, ethanol-soluble extractive content, and total ash content of 7.33% ± 0.577; 35.33% ± 2.01; 80.8% ± 2.49; and 5.33% ± 0.57, respectively, indicating that the onion peel extract meets the requirements established in the 2017 Herbal Pharmacopoeia. This study was conducted by formulating onion peel extract phytosomes with several extract and phospholipid ratios using the thin-layer hydration method and evaluating their physicochemical characteristics, stability, and antioxidant activity. The results of phytosome evaluation, including organoleptic properties, encapsulation efficiency, and stability, showed that Formula 2 with an extract and phospholipid ratio of 1:2 was the best formulation. The average evaluation results of encapsulation efficiency, pH, particle size, polydispersity index, and zeta potential were 88.10%; 6.82; 382.93 nm; 0.434; and −18.36 mV, respectively. The results of antioxidant activity testing using the DPPH (2,2-diphenyl-1-picrylhydrazyl) method on the phytosomes showed an IC50 value of 65.02, which is included in the strong category, indicating the presence of antioxidant activity in the onion peel extract phytosomes.
