ANALISIS FLAVONOID DAN ANTOSIANIN MINUMAN KOMBUCHA BUNGA TELANG (Clitoria ternatea L.) DENGAN PENAMBAHAN EKSTRAK KULIT BUAH NAGA MERAH (Hylocereus costaricensis)

Free radicals are reactive molecular species that are formed during various metabolic processes in living organisms. Reactive oxygen species (ROS) are one type of free radical that can induce oxidative stress & contribute to the development of diabetes mellitus (DM). The projected increase in the global prevalence of DM highlights the importance of early intervention through dietary modification by consuming foods rich in bioactive compounds. Kombucha, butterfly pea flower (Clitoria ternatea L.), & red dragon fruit peel (Hylocereus costaricensis) are known to contain bioactive compounds such as flavonoids & anthocyanins, which exhibit potential antidiabetic activity. This study aimed to determine the flavonoid & anthocyanin content of kombucha beverage with the addition of red dragon fruit peel extract. The research employed an experimental design using a completely randomized design (CRD) with three formulations of red dragon fruit peel extract addition, namely 1%, 1.5%, & 2%. The results showed that the addition of red dragon fruit peel extract produced a significant difference in the flavonoid content of butterfly pea kombucha beverage. The highest flavonoid content was found in formulation F3 (2%), while the lowest was observed in F1 (1%). However, anthocyanin levels were not detected, which may have been influenced by temperature and light exposure that affect anthocyanin stability, thereby triggering hydrolysis and leading to anthocyanin degradation. For future research, it is recommended to minimize the use of high temperatures during processing, utilize dark glass bottle packaging for the formulation, monitor storage conditions, shelf life, & conduct pH analysis.
