OPTIMASI DERAJAT SOSOH TERHADAP KARAKTERISTIK KIMIA BERAS MENGGUNAKAN METODE RESPONSE SURFACE
This study aimed to determine the optimal degree of polishing that produced the chemical characteristics of IR42 rice using the Response Surface Methodology (RSM). This study used a one-factor optimization design with a milling degree ranging from 0 to 100% using an I-optimal design in Design Expert 13, resulting in 13 experimental runs. The parameters analyzed included moisture content, ash content, protein content, fat content, and carbohydrate content. The results showed that moisture content ranged from 11.78–12.53%, ash content from 0.01–0.55%, protein content from 7.47–16.56%, fat content from 1.65–4.21%, and carbohydrate content from 67.61–77.90%. Ash content response met the model adequacy criteria based on ANOVA, Lack of Fit, R², Adjusted R², Predicted R², Adeq Precision, and VIF. Optimization results using Response Surface Methodology (RSM) predicted that the optimum degree of milling for IR42 rice was 41.84% with a desirability value of 0.552.
