OPTIMASI DERAJAT SOSOH TERHADAP KARAKTERISTIK FISIK BERAS MENGGUNAKAN METODE RESPONSE SURFACE
This study aimed to analyze the effect of the degree of milling on the physical characteristics of rice and to determine the optimum condition using the Response Surface Methodology (RSM) approach. The study employed a single factor, namely the degree of milling (0–100%), using an I-optimal Response Surface Design with 13 experimental runs generated by Design-Expert 13 software. The observed parameters included color values (L*, a*, and b*), whiteness, hardness, and water absorption capacity. The results showed that the degree of milling significantly affected (p0.05) on hardness and water absorption capacity. Increasing the degree of milling increased the L* value and whiteness while decreasing the a* and b* values. The optimum condition was obtained at a 100% degree of milling with a desirability value of 0.837, producing predicted values of 71.49 for L*, 5.47 for a*, 26.86 for b*, 60.42% whiteness, 1540 gf hardness, and 23.93% water absorption capacity. Validation results confirmed that the developed model was valid for predicting the optimum milling condition.
