OPTIMASI DERAJAT SOSOH TERHADAP KARAKTERISTIK FISIKOKIMIA TEPUNG BERAS PENGGILINGAN KERING MENGGUNAKAN RESPONSE SURFACE METHODOLOGY
This research aimed to determine the optimal degree of milling to produce optimal physical and chemical characteristics of dry-milled rice flour using a custom optimal Response Surface Methodology (RSM) model (I-Optimal) in Design Expert 13 application. This experiment was conducted with one treatment factor (degree of milling) consisting of 13 experimental runs. The parameters (responses) observed included physical characteristics (yield, Lab* color and whiteness) and chemical characteristics (moisture content, ash content and protein content). The results showed that the ash and protein content responses met the optimization criteria. The selected (optimal) treatment obtained was a milling degree of 39.583% with a desirability value of 0.791 and the verification results showed that it fell within the 95% Prediction Interval (PI).
