UJI KINERJA MESIN PENGERING OTOMATIS TIPE RAK DENGAN PEMANAS LISTRIK UNTUK OPAK SINGKONG (Manihot esculenta)
Cassava crackers (Manihot esculenta) are traditional foods made from cassava that require a drying process before consumption. Conventional drying methods still rely on direct sunlight, making the process less effective due to weather conditions. Therefore, an automatic rack-type dryer with an electric heater was used to improve the efficiency and stability of the drying process. This study aimed to evaluate the performance of an automatic rack-type drying machine with an electric heater for cassava crackers and to analyze the effect of drying temperature and fan rotation speed variations on the drying process. The research method used was descriptive quantitative with temperature variations of 50°C, 55°C, and 60°C and fan rotation speeds of 1000 rpm, 1200 rpm, and 1400 rpm. The observed parameters included drying rate, material weight reduction, electrical energy consumption, energy efficiency, moisture content, air humidity, and airflow velocity. The results showed that increasing the drying temperature and fan rotation speed accelerated the drying process of cassava crackers. The highest drying rate was obtained at 60°C and 1400 rpm, reaching 16.70 g/hour on the upper rack and 16.73 g/hour on the lower rack. The highest material weight reduction was also obtained under the same treatment, namely 152.91 g on the upper rack and 158.75 g on the lower rack. Electrical energy consumption ranged from 1.55 to 3.43 kWh with an average energy efficiency of 2.31%. The final moisture content of cassava crackers ranged from 8.85% to 12.76%, and most treatments met the Indonesian National Standard (SNI) with a maximum moisture content of 12%.
