Thin disc-shaped fish crackers is one of the traditional food products typical of Palembang which has a characteristic crunchy and distinctive fish flavor. Variations in quality between producers could affect the chemical characteristics and consumer preference for the product. This study aimed to evaluate the chemical and sensory characteristics of thin disc-shaped fish crackers produced in the city of Palembang, including water content, ash content, fat content, and protein content. This study used a non-factorial randomized design (CRD) with the treatment factor, namely the variation of thin disc-shaped fish crackers with 5 treatment levels. Each treatment was repeated three times. The parameters observed included chemical characteristics (water content, ash content, fat content and protein content) and sensory characteristics (color, aroma, crispiness, taste and overall). The results of the study showed that the water content ranged from 2.63–4.21%, ash content 2.79–3.34%, fat content 16.27–22.26%, and protein content 7.95–21.26%. The sensory test showed that the color and taste attributes had a significant influence on the level of panelist preference, while aroma and crispiness did not show significant differences. Overall assessment, samples C and D showed a higher level of panelist preference than other samples.This study aims to evaluate the chemical and sensory characteristics of thin disc-shaped fish crackerss
