UJI KINERJA MESIN PENGERING OTOMATIS TIPE RAK DENGAN PEMANAS LISTRIK PADA KEMPLANG IKAN SARDEN (Sardinella sp.)
This study aims to test the performance of an automatic rack-type dryer with electric heaters in the drying process of sardine crackers (sardinella sp.). This study was conducted using a descriptive method with varying drying temperatures of 50°C, 55°C, and 60°C and fan speeds of 1000 rpm, 1200 rpm, and 1400 rpm with three repetitions. Observed parameters included drying rate, material weight loss, electrical energy consumption, drying efficiency, water content, relative humidity, and airflow velocity. The results showed that increasing temperature and fan speed increased the drying rate and material weight loss, but also increased electrical energy consumption. The highest drying rate was obtained at a temperature of 60°C and a fan speed of 1400 rpm, while the average drying efficiency was 5,31 %. The final moisture content in several treatments met the maximum SNI standard of 12%. Therefore, an automatic rack-type dryer with an electric heater is considered capable of increasing the effectiveness of the sardine flakes drying process, even though the heat distribution and air flow in the drying chamber are not yet even.
