ANALISIS PRINSIP HIGIENE DAN SANITASI SATUAN PELAYANAN PEMENUHAN GIZI (SPPG) PADA PROGRAM MAKAN BERGIZI GRATIS DI KECAMATAN SUKARAMI KOTA PALEMBANG
The implementation of the Free Nutritious Meals (MBG) program at the Nutrition Service Units (SPPG) must adhere to hygiene and sanitation principles to ensure food safety and quality. This study aims to analyze the implementation of the six principles of food hygiene and sanitation at SPPG X and SPPG Y. The study employed a qualitative approach through in-depth interviews, observations, and documentation, and the data were analyzed using Nvivo 15 for Windows. The results indicate that during the food ingredient selection process, both SPPGs have designated receiving areas and conduct physical inspections of the ingredients. The food ingredient storage process has been segregated by type and does not come into contact with the floor. The processing procedures generally follow established protocols, although improper mask usage was still observed. The storage of prepared food uses stainless steel containers, includes organoleptic testing accompanied by temperature checks, though these are not consistently performed. Transportation is conducted using a box truck with proper handover procedures. Although the route is relatively short, temperature control during distribution still requires attention. At the serving stage, there are still inconsistencies in several aspects. It is concluded that the implementation of hygiene and sanitation principles at SPPG X and Y largely complies with Ministry of Health Regulation No. 2 of 2023. However, further strengthening is needed in the areas of personal hygiene, temperature control, and final quality control to ensure food safety.
