PROFIL METABOLIT CASCARA (Coffea arabica L.) KOPI ARABIKA KULTIVAR SUNDA DAN SIGARAR UTANG DENGAN METODE GC-MS
Coffee (Coffea spp.) is one of Indonesia’s leading plantation commodities. During coffee processing, only the beans are commonly utilized, while the fruit skin (cascara) is often discarded as waste. This study aimed to compare the metabolite profiles of cascara from Arabica coffee cultivars Sunda and Sigarar Utang. Extraction was performed using Ultrasonic Assisted Extraction (UAE) with 70% ethanol, and metabolite analysis was conducted using GC-MS Shimadzu GP 2010 SE. The results identified 33 compounds in Sunda cascara, dominated by Heptadecanoic acid (24.91%), 9-Octadecenoic acid (Z) (20.28%), and Methyl (Z)-octadec-9-enoate (13.96%). Meanwhile, Sigarar Utang cascara contained 32 compounds, dominated by 9-Octadecenoic acid (Z) (21.72%), 9-Octadecenoic acid methyl ester (18.20%), 9-Octadecenoic acid (Z)-oleic acid (12.54%), and Thiosulfuric acid (12.41%). The identified compounds were mainly classified as fatty acids and esters in both cultivars. The metabolite compounds found in both cascara cultivars indicate potential biological activities, including antimicrobial, anti-inflammatory, antibacterial, antioxidant, and hypocholesterolemic properties, suggesting their potential application as functional beverage ingredients.
