PENGARUH KONSENTRASI AQUAFABA KACANG ARAB DAN SARI JERUK LEMON TERHADAP KARAKTERISTIK CHOCOLATE MOUSSE
This research aimed to determine the effect of varying concentrations of chickpea aquafaba and lemon juice on the physical, chemical, and sensory characteristics of chocolate mousse. The research employed a Factorial Completely Randomized Design with two treatment factors: aquafaba concentration (25% and 30%) and lemon juice concentration (0.1% and 0.3%). Each treatment was replicated three times. The parameters observed in this research included physical (foam capacity and stability of chickpea aquafaba, overrun of the chocolate mousse), chemical (moisture content, fat content, and pH of the chocolate mousse), and sensory (aroma, taste, and texture) characteristics of the chocolate mousse. The results showed that aquafaba concentration significantly affected the decrease in overrun and the increase in moisture content of the chocolate mousse, but had no significant effect on fat content and pH. Lemon juice concentration significantly affected the decrease in overrun of the chocolate mousse, but had no significant effect on moisture content, fat content, and pH. The best results were obtained in treatment A1B1 (25% aquafaba and 0.1% lemon juice) based on the overrun and sensory value texture parameters, which were not significantly different from those of the control sample. Sample A1B1 had the following characteristics: overrun of 82.27%, moisture content of 31.63%, fat content of 15.61%, pH of 6.32, and a texture score of 0.32 (not different from the control sample).
